Their Story

As soon as we hear about a new restaurant, the first thing we want to know is how they got their start. Over the years, we've heard plenty of stories, and we find NOTO Pizza's more compelling than most.

Wayne Sieve and Kendele Noto Sieve started their business back in 2017 after a few trips to Italy. The husband-and-wife team turned their infatuation with the culture and cuisine of the Old World into the motivation to launch a food truck. Later, in early 2020, they made the leap to a full-service restaurant.

As soon as you walk through the doors, you'll notice the centerpiece of the restaurant is the 3-ton Neapolitan wood-fired oven. Handcrafted across the pond in Naples, it churns out all types of pizzas:

• Margherita: San Marzano tomato sauce, parmesan Reggiano, Sicilian sea salt, fresh mozzarella, basil, and olive oil.
• Bufalina: San Marzano tomato sauce, basil, olive oil, Sicilian sea salt, and Bufala mozzarella.
• Nduja: Calabrese cream sauce, onion jam, nduja (spicy salami spread), and fresh mozzarella.
• Italiano: San Marzano tomato sauce, fresh mozzarella, Calabrese sausage, basil, olive oil, parmesan Reggiano.
• Verdura: San Marzano tomato sauce, fresh mozzarella, roasted seasonal vegetables, local mushrooms, arugula, and pecorino Romano.
